Marinated radishes add crunch and colour to this open steak sandwich, which features creamy avocado for added texture.

Serves 2

5 radishes, thinly sliced

juice of 1 lemon

30ml olive oil

200g sirloin

olive or avocado oil, for frying salt and freshly ground black

2 slices sourdough bread, chargrilled

1 ripe avocado, thinly sliced

1) For the marinated radish, combine the radish and lemon in a bowl and allow to marinate for up to 1 day but at least for 30 minutes.

2) To cook the steak, rub the sirloin with olive oil and season. Cook in a hot chargrill pan for 4-5 minutes each side for medium-rare, or until cooked to your liking. Remove from the pan and allow to rest for 10 minutes.

3) Slice the steak into thin slices and place on top of the griddled sourdough. Add slices of avocado, marinated radish and pea shoots, and serve immediately.
